
This week I made some of the nicest cookies I have ever eaten! So simple and tasty. It’s a flapjacky (new word!) Christmas cookie treat! They’re from The Hebridean Bakers cook book and I am very excited that he is guesting on my show this afternoon. His books are gorgeous and the photographs of his food are so much better than mine 😉. You can make your own mincemeat and Coinneach has added a fab recipe that you can use and then add to the cookie mix. Again, if you make the recipe, please take a pic and pop it in the comments. Christmas Cookies
Ingredients
- 100g butter
- 50g soft brown sugar
- 50g plain flour
- 100g oats
- 3 tbsp mincemeat
- 1 tbsp maple syrup or honey
- icing sugar, to dust
Method
- Line a baking tray with parchment. Heat oven to180d.
- Cream butter and sugar.
- Add flour. Mix. Add oats. Mix. Add mincemeat and maple syrup. Stir.
- Divide mix into balls of around 2 tablespoons. I got 7 generous sized balls. Pop onto the tray. Bake for 15-20 mins. Cool on wire rack. Dust with icing sugar.
