Christmas Cookies (09/12/22)

This week I made some of the nicest cookies I have ever eaten! So simple and tasty. It’s a flapjacky (new word!) Christmas cookie treat! They’re from The Hebridean Bakers cook book and I am very excited that he is guesting on my show this afternoon. His books are gorgeous and the photographs of his food are so much better than mine 😉. You can make your own mincemeat and Coinneach has added a fab recipe that you can use and then add to the cookie mix. Again, if you make the recipe, please take a pic and pop it in the comments. Christmas Cookies

Ingredients

  • 100g butter
  • 50g soft brown sugar
  • 50g plain flour
  • 100g oats
  • 3 tbsp mincemeat
  • 1 tbsp maple syrup or honey
  • icing sugar, to dust

Method

  1. Line a baking tray with parchment. Heat oven to180d.
  2. Cream butter and sugar.
  3. Add flour. Mix. Add oats. Mix. Add mincemeat and maple syrup. Stir.
  4. Divide mix into balls of around 2 tablespoons. I got 7 generous sized balls. Pop onto the tray. Bake for 15-20 mins. Cool on wire rack. Dust with icing sugar.
