Mac ‘N’ Fish (01/07/22)

This dish intrigued me. So I gave it a go. We love macaroni cheese and fish pie is also a favourite – what could go wrong?!! It sounds weird, right? It tastes amazing. I didn’t even mind the fish! I used 340g fish simply because that was how it was sold. I used spring onion as I had no leek and used colmans mustard powder. This easily feeds 6. We got the fish 3 for £10 and froze two packets to use later. A rough cost of the dish is £7-£8. It will keep chilled for 3 days or you can freeze it for a month so good if you like to meal prep. Use any fish/veg combo you like.

Mac ‘N’ Fish

Ingredients

  • 650 ml milk
  • 40g plain flour
  • 40g butter
  • 2 tsp dijon mustard
  • 150g mature cheddar, grated
  • 180g frozen peas
  • Finely sliced small leek
  • 300g macaroni
  • 300g fish pie mix
  • 100g breadcrumbs (1 slice, heel of loaf)
  • 35g parmesan
  • Salt and Pepper

Method

  1. Melt butter, add flour, mix. Gradually add milk, whisking all the time until thick and smooth. Add salt and pepper to taste. Remove from heat. Add mustard, most of the grated cheese (keep back a handful for the top), peas and leek. Meanwhile, boil pasta according to instructions until just cooked, drain. Heat oven to 200c/180c fan/6 gas.
  2. Tip pasta and half the fish into the sauce, stir everything together, then tip into a large baking dish. Top with the rest of the fish, pushing it into the pasta a little. Mix the breadcrumbs and parmesan. Scatter on top of dish, scatter remaining grated cheese. Bake for 30 mins until golden.
